Chicken Caldereta Recipe, How To Cook Caldereta Using My Trusted Mix

Can I let you in on a little secret? Before I got married, I don’t know how to cook complicated dishes without a cookbook. The only ones I know by heart were fried dishes, ginisang ampalaya, adobo, and sinigang. So, how did I know how to cook chicken caldereta? The answer is Mama Sita’s Meal Mixes.

Mama Sita’s® line of food mixes and sauces was born out of Mrs. Teresita “Mama Sita” Reyes’ pity for Filipinos abroad. She was worried that ‘children would grow up without getting to savor Filipino cuisine due to the absence of necessary ingredients and the time-consuming way of preparing them.‘ **Information is from Mama Sita’s website. Thank God for her heart, moms like me who don’t know how to cook (though I am just from the Philippines), benefited from her initiative.

Chunky Chicken Caldereta Recipe

Caldereta Spicy Sauce Mix is one of the first mixes that I’ve tried from their brand. You may either use beef, pork, or chicken with the mix. Here’s the recipe:


Chicken Caldereta Ingredients
Chicken Caldereta Ingredients, plus water

Ingredients:

250g boneless chicken
3 tbsp cooking oil
50g Mama Sita’s Caldereta Mix
2 cups of water
1 tbsp garlic, crushed
1 pc onion, chopped
tomato 1pc or more, chopped
carrots, cut into serving portions
potatoes, cut into serving portions
1 bell pepper, sliced
green peas
***cheese (optional)
***1/2 cup fresh milk (optional for creamy version)

Procedure:

Chicken Caldereta Recipe Video
  1. Heat oil in a pot and sauté onion, garlic, and tomato.
  2. Add chicken and stir-fry until edges of meat has browned.
  3. Add Mama Sita’s Caldereta Mix and water and let it boil.
  4. Once boiling, add the potatoes and carrots. Cover and simmer until the potatoes are tender.
  5. Add bell pepper and green peas, then cook for another three minutes.
  6. Wait until the sauce thickens and the cheese has melted if you added it.
